Ingredients

Sponge:

-5 eggs
-165 grams of sugar
-1 pinch of salt
-1 packet of vanilla sugar
-150 grams of flour
-2 tablespoons of starch
-1/2 (half) teaspoon baking powder

For the cream;

-600 ml liquid cream
-500 grams of mascarpone
-250 grams of sour cream
-4 tablespoons of sugar
-4 tablespoons of cream hardener (in powder form)
-1 cup of coffee
-Chocolate ice cream and blueberries for decor

How to make

Sponge cake: separate the yolks from the eggs.
Whisk the white until it is like snow and add the sugar and vanilla sugar to the salt.
Add the egg yolks one by one.
Mix the flour, starch and baking powder and sift it into the eggs, mix carefully.
Add it to the 24cm mold with greaseproof paper.
Bake in a preheated 175c oven for 30-35 minutes at the top and bottom setting.
After it cools, cut it into 3 parts.
Cream: whisk the liquid cream with sugar and astringent.
Add the mascarpone and sour cream.
Soak the cake with coffee and spread it over 1/3 of the cream. Repeat this process. (take 3-4 spoons from cream) Put the cake in the fridge for 3-4 hours.
Spread the cream we have separated on the outside and sprinkle with cocoa, decorate with pretzels and blueberries.
