Eggplant Sauce (Ajvar) Recipe


Ajvar is a kind of breakfast sauce that is often consumed by Balkan countries and prepared as a winter preparation at home, with added flavor by roasted eggplant, red pepper, tomato, onion, and garlic.

The sauce, also pronounced as quince; In addition to canape varieties and pastries, you can easily use it in pasta sauces, grilled meat, and chicken dishes, and include the spices you want in the recipe.

-2 medium eggplants
-4 tomatoes
-3 red peppers
-1 onion
-2-3 coarse garlic
-1 tablespoon of hot chili pepper

How to make

Eggplant and red peppers are roasted and peeled.
Onion and garlic are finely chopped and fried in oil.
Tomatoes are passed through rondo and added.
The tomatoes are close to absorbing the juice, the roasted eggplant and red peppers are cut into small pieces and added to the tomato.
When the water is absorbed, it is taken from the furnace and passed through the robot.
If the eggplant sauce in the jar is to be consumed within 1 week, olive oil is poured on it.
