Ekşili Aya Sulusu


Although the original of this dish is like this and it is called "Ekşili Eya Sulusu", today it is only made with rolled meat patties without using meat. It is even said that the ground beef is called “Ekşili Aya Sulusu” since it is rolled with a palm.

-500 grams of ground beef

How to make

In a saucepan, a small onion and two garlic cloves are chopped and roasted.
A tablespoon of pepper paste is added into the roasted onions and roasted until the smell comes off, then one and a half liters of water are added on top of the salt and left to boil.
In the meantime, the ground beef is placed in a bowl and mixed with salt, pepper, powder pepper, thyme, and kneaded well.
Large pieces of chickpeas are taken from the kneaded minced meat, rolled well, and left on a tray.
Flour is sprinkled on it so that it does not stick together.
The ground beef that we have rolled is thrown into our boiled water and left to cook.
After the minced meat is cooked, a water glass of boiled chickpeas is added and left to boil.
After boiling, cover the bottom and add 1 tablespoon of sour liquid into it, check the sour and salt, if it is missing, add dry mint and leave it to rest.
After resting, it is served in bowls.
