Those who eat without gout and crave something sweet ... It is actually very easy to make a delicious cookie without flour! Here is a recipe that you cannot get enough of. Moreover, without refined sugar.
For the cookie:
-200 gr. butter (at room temperature)
-Half a glass of powdered sugar
-2 soup spoons of cocoa
-2 teaspoons of vanilla
-2 teaspoons of baking powder
-2 tablespoons of Nutella
-Half a glass of rice flour
-Half a glass of cornmeal
-Gluten-free flour as much as it takes (up to 2 cups)
For the above:
-Additional ingredients desired (crushed walnut, coconut, pistachio, and sugar were used in the recipe)
How to make
To prepare the cookie dough: put all the ingredients, except the flour, into a mixing bowl, mix by hand, and add the flour gradually to prepare a soft dough that will not stick to the hand.
Set the oven to 180 degrees, and spread the greaseproof paper on a baking tray.
Take walnut-sized pieces from the dough and roll them. Note: Since the dough is gluten-free and cocoa is used, it spreads a little while rolling, rub the dough with very light oil and squeeze the dough.
After shaping the dough, dip it in the additional material you want and place it on the tray. I did a little plain.
If you want, you can cook it plain and sprinkle powdered sugar on it before serving.
The whole dough is prepared in this way and cooked for about 20-25 minutes, do not overdry.
After the baked cookies have cooled in a tray, they are taken to the serving plate.
