İslim kebab is a kebab in love with eggplant prepared with large meatballs that you prepare and fry beforehand. The fried eggplant strips in the recipe wrap and wrap the meatballs, and the kebabs that are baked in the oven with the help of the tomato sauce you prepare are browned perfectly. This recipe, also known as toothpick kebab, is quite easy to make, but looks very difficult and impresses on the tables.
-4 tall eggplants
-2 pieces of bell pepper
-Oil (for frying aubergines)
For the meatballs;
-400 gr minced meat
-3-4 slices of bread
-2 cloves of garlic
-Salt, pepper, paprika, cumin
-1 pinch of parsley
For the sauce;
-1 tablespoon tomato paste
-1.5-2 cups of hot water
How to make
Eggplants are peeled in strip form, cut long and cut in saltwater for 15-20 minutes.
Then, the salt is washed and dried and fried in oil.
Grate onion and garlic for patties.
Cut the parsley finely, knead the meatballs by adding minced meat, crumbled bread, eggs, and spices.
With the oil left from eggplant, first, fry the stuffed peppers cut into 4-5 pieces and then fry the meatballs.
Take 2 eggplants and put them in the form of a plus and put 2 meatballs in the middle. Meatballs can be a large piece.
Put the ends of the eggplant on the patties and make it like a bundle.
Put it on pepper and sliced tomato and fasten it with a toothpick.
Place all eggplants in the same way and place them on a baking sheet.
In a separate bowl, grind the tomato paste in hot water and pour it over the eggplants.
Bake the tomatoes in a 185-degree oven until golden brown.
